This week is jam packed with meetings and events, so I am keeping dinner VERY fast and easy and even have a little help from the store. Scott is also out of town from Thursday afternoon through Sunday and I just don't cook as much when he's gone. So keep that in mind when you read this week's menu.
Monday - Baked chicken tenders with honey pecan glaze (recipe below), corn on the cob, whole wheat dinner rolls
Tuesday - Pulled pork sandwiches, crash hot potatoes, salad
Wednesday - Veggie stir fry, fried rice, fresh pineapple
Thursday - Mac & cheese (Daddy's out of town.)
Friday - Scott's gone, so probably Chick-fil-a
Honey Pecan Glaze
1 cup (2 sticks) butter
1/2 cup honey
1 cup coarsely chopped pecans
Melt the butter in a saucepan over low heat. Whisk in the honey until well blended. Bring to a simmer and add the pecans. Simmer for 10 minutes, stirring occasionally. Ladle the glaze over the hot chicken and serve.
